Context : After a year of fully-funded renovation, Flocons de Sel reopened its doors on 6 December 2025, confirming its status as one of the Alps' must-visit restaurants and institutions.

Chef Emmanuel Renaut, renowned for his creative cuisine and warm welcome, heads up this Michelin three-star restaurant. Meilleur Ouvrier de France, Emmanuel Renaut offers a unique interpretation of Alpine gastronomy, based on simplicity and seasonality.

Kitchen : His signature cuisine draws on the riches of the Haute-Savoie region: lake fish, mountain mushrooms, wild herbs, berries and high altitude plants. The chef's philosophy is based on a pure and constant dialogue with Alpine nature, where each season inspires new creations.

Frame : Set on the Rochebrune massif, Flocons de Sel boasts panoramic views of Mont Blanc and the valley. The 5-star Relais & Châteaux hotel boasts an exceptional spa with heated indoor pool, sauna and outdoor Swedish bath.

Le Clos des Sens - Annecy-le-Vieux

Perched on the heights of Annecy, the hotel with its discreet charm offers an idyllic setting with outstanding gastronomic cuisine in the heart of a terraced garden overlooking the lake.

Chef Franck Derouet and his partner Thomas Lorival orchestrate a cuisine based entirely on plants and fish from Alpine lakes. The concept of gastronomic cuisine based on plants and lakes offers tasting menus with refined flavours, with food and wine or food and juice pairings.

Culinary philosophy : Each plate borrows as much from poetry as from modern art. The fruit, vegetables, flowers and herbs come from their own kitchen gardens or from producers located less than 100 km away. The work on lake fish explores innovative textures and cooking methods, allowing us to enjoy a raw féra enhanced by a powerful garum several weeks old, or a mature pike cooked like grilled meat.

Awards : Le Clos des Sens not only has three Michelin stars, but also the Étoile Verte (sustainable gastronomy) and four toques in the Gault&Millau guide.
